Ingredients.
Steaks of Choice
Unsalted butter (about 1 tablespoon per steak)
Bourbon
Old No. 3 Rub
Prep.
Take steaks out of the frig and let sit at room temperature about thirty minutes,
apply solid, but not heavy coverage of Old No. 3 Rub. Go ahead and melt the
unsalted butter with a dash of bourbon.
Live Fire.
Get cookin’ with a smokin’ hot fire; shoot for about 325 degrees. Red and ashy,
time to cook. Billy adds wood chunks for more smoke.
Cook.
Billy likes to “reverse sear”, goes like this:
Place the steaks on the pit for indirect heat for about twelve minutes in this
position, flip once.
Time to sear. Move the steaks directly over the hot coals and flames. At about
300 degrees, cook steaks about 2 minutes each side for medium rare and about 3
minutes on each side for medium.
All in for Billy’s char-magic? Pour the melted bourbon butter directly on the
steaks for about 30-seconds of flame, flare, and sizzle. Repeat the process on the
other side.
Always remove steaks from the pit a little under cooked relative to likin’, because
the steaks will continue cookin’ at rest. Time to “Eat Good!”
